
Kurdai chi bhaji is a very easy and simple recipe. You can make it in a jiffy. If there is no sabzi at home and you with to make something tasty and yummy this is a perfect option.
Ingredients:
• 4 Kurdai / Crushed kurdai
• 1 finely chopped Onion
• 7~8 Curry leaves
• 7~8 finely chopped Garlic cloves
• 1/4 tsp Hing
• 1/4 tsp Turmeric powder
• Salt to taste
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1 tsp Red chili powder
• 1 tsp Kanda lasun masala
• 2 tbsp Oil
Method:
• Crush kurdai into a bowl. Do not crush it finely.
• You can use crushed kurdai if you have.
• Add enough water.
• Cover and soak kurdai for about 30 minutes.
• After 30 minutes, drain the soaked through a strainer.
• Heat up oil in a pan.
• Add mustard seeds and let them pop up.
• Add cumin seeds and let them splutter.
• Add hing, garlic and mix well.
• Fry for about a minute.
• Add curry leaves, onion and mix well.
• Fry onion until it gets light golden color on medium heat for about 5-6 minutes.
• When onion begins to get light golden color add AREVA kanda lasun masala, AREVA red chili powder and mix well.
• You can use AREVA goda masala or AREVA kala masala or AREVA varhadi masala or AREVA kanda lasun msasala.
• Fry the spices for about a minute.
• Add soaked and drained kurdai, salt to taste and mix well.
• Cover and steam on low to medium heat for about 4-5 minutes.
• Turn off the gas and add coriander leaves.
• You can have kurdai chi bhaji with poli or bhakari.
• It goes well with rice too.
